Marinated Mushroom Salad / Salatka z Marynowanych Pieczarek

Ingredients

  • 1 small leek (white part)
  • 400 g pickled mushroom
  • 4 eggs (hard boiled)
  • 1 can green peas (medium)
  • 1 tbsp lemon juice (optional)
  • 100 ml mayonnaise
  • 100 ml yogurt
  • 1 tbsp sugar
  • 1 salt to taste
  • 1 pepper to taste

Instructions

  • Wash leek, cut it lengthwise into 4 parts and cut into strips. Soak leek in boiling water and tsp sugar for approximately 1-2 minutes. Then strain and cool . Cut the hard boiled eggs into cubes. Drain mushrooms and cut into small cubes. Mix all vegetables with mayonnaise and yogurt. Season to taste with lemon juice, salt and pepper. Refrigerate.
