Blueberry Cake / Ciasto Ucierane z Jagodami

Ingredients

  • 1.5 Stick Butter
  • 3/4 Cup Sugar
  • 5 Eggs
  • 2 Cups All-purpose flour
  • 1 tbs Sour cream
  • 2 tsp Baking powder
  • 2 Cups Blueberries
  • Vanilla sugar (Optional)
  • 1/4 Cup Powdered Sugar (Optional)

Instructions

  • Wash the berries and leave to dry completely. Mix the butter with sugar and vanilla sugar to form a smooth mass. Add egg yolks and sour cream and continue to mix on low speed. Add sifted flour and baking powder and mix thoroughly. Beat the egg whites until stiff and add at the very end. Mix gently to get a uniform consistency. Add the berries on top and mix them gently with a few moves, it doesn’t have to be very thorough and even
  • Pour the dough into a baking pan. I used 10 x 10 inches square glass pan. Bake at 300 F for about 60-90 minutes. Oven temperatures vary and you know your oven best. Bake until the dough rises nicely, it will be golden brown and the tooth pick should be dry when inserted in the middle. Cool and sprinkle lightly with powdered sugar. Enjoy.
