Ingredients

  • 1 kg baby potatoes
  • 4 cloves garlic chopped
  • 1 tbsp fresh rosemary chopped ( may use dry)
  • 1 tbsp fresh thyme chopped (may use dry)
  • 1 tsp onion powder
  • 1 tbsp fresh parsley leaves chopped (optional)
  • 1 tbsp fresh dill chopped (optional)
  • 1 pinch sea salt to taste
  • 1 pinch pepper to taste
  • 3-4 tbsp olive oil

Instructions

  • Do not peel potatoes, but we wash them thoroughly and then wipe dry. Only the dry ones will bake until golden brown and will have a crispy crust, if you leave them wet, they will start to cook during baking, so they will be soft and unappetizing.
  • Toss potatoes with herbs and oil, until covered on all sides. Roast on a baking sheet in a 400°F preheated oven for about 40 minutes. (Oven temperatures may vary). Decorate with remaining herbs. Serve hot. Enjoy your meal!
  • The herb blend is very light and fragrant. Prepared potatoes can be an addition to fried eggs (the old idea for summer dinners), grilled meats, or an independent dish with a glass of cold curdled milk or Greek yogurt.
