Spring Canapes / Kanapki Wiosenne

I like sandwiches with vegetables the most, especially in spring, when the body shifts from winter mode and craves spring vegetables. Fashionable and simple sandwiches that can be served at parties. They are delicious and very effective. No more seeing sandwiches only as a way to make a quick breakfast or lunch for work and school when you don't have enough inspiration for something more sophisticated.

Ingredients

  • 8 slices Polish rye bread (cut each slice in to 4 pieces)
  • 1 vegetable spread
  • 8 slices ham or Krakowska sausage
  • 8 slices cheese of your preference
  • 2-3 radishes
  • 1 tomato
  • 1 cucumber or picked cucumber
  • 2 hard boiled eggs
  • 1/2 bunch chives
  • 1 pinch salt to taste
  • 1 pinch pepper to taste

Instructions

  • Hard-boil the eggs cool them, peel it and cut it into slices. Wash vegetables, remove hard and non-edible parts and cut them into slices. Chop the chives.
  • Spread the vegetable spread on each slice of the bread and arrange in turn, ham/Krakowska, cheese, tomato, egg, cucumber or pickled cucumber, and radish. Sprinkle with chives and season to taste with a pinch of salt and pepper.
