Chicken Breast Chops with Red Pepper, Onion and Cheese / Piers z kurczaka Zapiekana z Czerwona Papryka, Cebula i Serem

Ingredients

  • 1 chicken breast divided in to 4 thin cutlets
  • 1/2 cup all-purpose flour (sifted)
  • 2 eggs
  • 1 cup bread crumbs
  • 1 red pepper (small)
  • 1 onion (medium)
  • 2 garlic cloves (squeezed)
  • 4 cheese slices (may be shredded)
  • 3-4 tbsp oil (for frying)
  • 1 salt to taste
  • 1 pepper to taste

Instructions

  • Wash chicken breasts and divide into 4 parts. Tenderize each piece (preferably through a plastic bag so that the meat is not cut). Then season the meat with salt, pepper and garlic. Mix eggs with a little salt. First coat the meat in flour and then in the egg and breadcrumbs (breadcrumbs stick better to meat and are tastier).
  • Fry on both sides until golden brown. When done transfer the cutlets into a baking tray. Saute sliced onion and cut up red Pepper in a little oil. (I also seasoned red peppers and onions with a little salt and pepper). Place sauteed onions and red pepper evenly on top of each cutlet. Place cheese of your preference on top. Then place the cutlets in a preheated oven to 400 degrees F and bake for 10-15 minutes until cheese melts. Can be served with salad and potatoes. Enjoy!
