Baguette with mushrooms / Zapiekanka z Pieczarkami i Serem

One of Poland’s favorite fast foods is this unique open-faced sandwich. The scrumptious Polish zapiekanka is made with a plain white baguette cut lengthwise, topped with a variety of tasty ingredients and a generous heaping of grated semi-hard cheese, and baked in the oven.

Ingredients

  • 1 baguette
  • 400 g mushrooms (preferably wild mushrooms)
  • 1 yellow onion
  • 2 tbsp butter (preferably clarified)
  • 150 g mozzarella cheese (shredded)
  • 1 salt to taste (optional)
  • 1 pepper to taste (optional)

Instructions

  • Cut the baguette in half lengthwise. Wash mushrooms let them dry and cut into small pieces on a cutting board. You can chop them or grate/shred them if you prefer. Peel the onion and cut into small cubes.
  • Heat butter in a frying pan and fry the onion. Add cut, chopped or grated/shredded mushrooms and fry, stirring for about 5 minutes until all water evaporates, season with salt and pepper.
  • Preheat oven to 400 degrees Fahrenheit. Place the mushroom stuffing on rolls, sprinkle with shredded cheese.
  • Place on a baking tray in a preheated oven. Bake for browning for about 7 minutes. Serve warm. Best with ketchup.
