Shortbread Cookies / Kruche Ciasteczka
Home made cookies are way better than the store bought. Shortbread cookies prepared according to this recipe are really delicious, have a buttery taste and an incomparable smell. Easy to prepare, loved by children and adults, they store perfectly. But if you want to have something to store prepare a double portion of these delicacies right away. It's the perfect snack for afternoon coffee or tea or a sweet snack to cheer you up. This recipe yields 40-50 cookies depending on size.

- 300 grams all-purpose flour
- 100 grams powdered sugar
- 200 grams Unsalted Butter or baking margarine (softened)
- 2 medium eggs
- 1 envelope vanilla sugar or 1 teaspoon vanilla extract
Chop the butter/baking margarine with powdered sugar, mix, add 1 whole egg, and one egg yolk and slowly incorporate sifted flour, little by little until a uniform dough. Wrap it in foil, put them in the fridge for at least half an hour.
Then roll out to a thickness of 3-4 mm and cut out cookies with a cookie cutter. Place on a tray lined with baking paper.
Before baking, they can be brushed with egg white left over and coated in sugar, or sprinkled with nuts ( almonds, sesame seeds, poppy seeds , coconut flakes, etc.). If you are going to frost them or glaze them then do not brush them with egg white. Bake for about 15 minutes at 330°F until golden brown. Oven temperatures may vary.
Let the cookies cool and then decorate with glaze, frosting or as preferred. Enjoy!
