Shortbread Christmas Cookies / Kruche Ciasteczka Swiateczne
Shortbread cookies are a must at my house for any celebration and especially for Christmas and Easter. They are super crispy, light , delicious and incredibly easy to make.

- 30 dag all purpose flour (sifted)
- 20 dag Margarine or butter Preferably Kasia Margarine)
- 10 dag Powdered sugar
- 1 whole eggs
- 1 egg yolk
- 1 egg white (to brush the tops)
- 1 package vanilla sugar (optional)
- 1 pinch salt (optional)
Mix the flour with powdered sugar and vanilla sugar. Add margarine, chopped into small pieces.
Add the one whole egg and the egg yolk in. Reserve the egg white to spread on top of cookies before baking.
Knead everything quickly to get a uniform consistency.
Wrap in cling wrap and refrigerate for about 30 minutes.
After 30 minutes spread the dough on a floured board and roll it out to a thickness of about 3-4 mm.
Cut out the Christmas cookies from the dough with a cookie cutter and place them on a baking sheet lined with baking paper. With a brush gently spread the egg white over the tops of cookies.
Bake for about 10 minutes at 320 degrees Fahrenheit. After cooling decorate as desired. I drizzled melted chocolate on half of batch, and sifted powdered sugar on the other half of batch. Enjoy!
