Red Borscht / Barszcz Czerwony Wigilijny
This is a recipe for a traditional Polish borscht and is usually served on Christmas Eve as a soup with dumplings, or potatoes . It can also be served in a cup, as an addition to croquettes which is one of my favorites.

- 4 L Water (may use meat stock)
- 1 kg red beet root scrubbed well
- 3 medium carrots peeled
- 1 medium parsley root peeled
- 1/4 large celery root peeled
- 1 green celery stalk
- 1 medium yellow onion peeled
- 1/2 medium leek
- 1 medium granny smith apple cored unpeeled
- 5-6 garlic cloves
- 3-4 pieces dried mushrooms (optional)
- 1 salt to taste
- 1 black pepper to taste or peppercorns
- 1 sugar to taste
- 1-2 tablespoons lemon or vinegar to taste
- 3-4 bay leaves
- 5-6 grains allspice
- 1 tablespoon marjoram (optional)
Scrub the beetroot, there is no reason to peel it and cut into thick slices and place on the bottom of a big pot.
Cut up the vegetables and add to the beets root. Add garlic and dried mushrooms.
Cover with water. place on high heat until the water boils and then reduce heat and cover the pot and let it simmer until the vegetables are tender.
When the soup start to simmer add about a teaspoon of vinegar or lemon juice so that the soup retains it's red, bright color.
When the apples are cooked, remove them.
When vegetables and beets are tender strain and remove them by using a strainer add salt, vinegar / lemon juice, pepper and sugar to taste.
Serve with dumplings, croquettes, hard boiled egg or potatoes. Enjoy!
