Mini muffins / babeczki are perfect for an Easter basket with Easter eggs. Mini babeczki are a perfect addition to an Easter basket, delighting with both taste and charming appearance. Preparing them in various flavors, such as lemon, vanilla, chocolate or even marble, will allow you to create a colorful and appetizing palette of sweets. Thanks to their small size, they are perfect for sharing with loved ones, adding extra sweetness to holiday moments. Decorating them with pastel icing, sprinkles or small Easter figurines will make them not only tasty, but also look unique. Mini cupcakes are a great way to add something special to a traditional Easter basket that will bring joy to both children and adults.

Instructions

1 large egg2 tablespoons of sugar-free vanilla pudding (powder)2 tablespoons of thick cream 18% (or yogurt)3 tablespoons of oil3 tablespoons of sugar with vanilla (or vanilla)5 tablespoons of milk6 tablespoons of cake flourhalf a teaspoon of baking powder

  • Preheat the oven to 160°C with convection (without - 170°C). Grease silicone muffin molds or traditional muffin molds (6 pcs.) with oil. In one bowl, combine the wet ingredients: egg, oil, milk and cream - mix with a whisk until combined. In the second one, combine the dry ingredients: flour, pudding, powder and sugar - mix. Pour the dry ingredients into the wet ingredients and mix with a whisk until thoroughly combined - no longer - the dough may have small lumps. Pour into the prepared molds (approx. 3/4 of the height) and place in the preheated oven for approx. 20-25 minutes. If the cupcakes grow on top, cut them off with a knife to make them stand stable. To obtain the icing, add a little lemon juice to the powdered sugar and mix. Instead of lemon juice, you can use orange juice or water (or a few drops of raspberry syrup to obtain pink icing). If the icing is too thick, add more liquid, if it is too thin, add sugar. Pour over the cupcakes while they are still warm.
