Chicken and Tortellini Salad /Sałatka Tortellini z Kurczakiem

- 2 cucumbers (medium)
- 3 tomatoes (medium)
- 1 can whole corn (425 g)
- 2 chicken breasts (medium)
- 1/2 cup mayonnaise
- 1/2 lb tortellini (herb chicken)
- 1/2 cup fresh chopped dill
- 1 tsp ground turmeric
- 1 tsp dried rosemary
- 1 salt to taste
- 1 pepper to taste
- 1 tsp rubbed sage
- 1 tsp thyme
- 1 tsp garlic powder
- tsp onion powder
- 1 tsp red paprika
- 1 tbsp. olive oil
Marinade the chicken breast with salt, pepper, and the rest of the herbs for 1-2 hours. (Preferably overnight) When marinated sauté on low heat until tender and set aside to cool. Cut into cubes when cooled.
Boil pot of water and cook the tortellini for the time indicated on the packaging. Strain and leave to cool.
Peel the cucumber from the skin and wash the tomatoes thoroughly. Cut them into cubes, add corn, dill and mix together in a large bowl.
Add the tortellini, cubed chicken breast, mayonnaise. Mix everything again. Add salt and pepper to taste. Refrigerate at least for 30 minutes before serving. Enjoy!
