Cucumber Salad Polish Style / Mizeria z Ogorkow ze Smietana
Quick to make, creamy cucumber salad with the addition of apple cider vinegar / lemon juice, sugar and salt. I used dill for garnish but chives can be a great addition as well. This creamy salad can be used as an addition to any dinner as well as sandwiches. It is extremely easy to make, very inexpensive and requires just a few ingredients.Cucumbers are good sources of phytonutrients (plant chemicals that have protective or disease preventive properties) such flavonoids, lignans and triterpenes, which have antioxidant, anti-inflammatory and anti-cancer benefits, according to World’s Healthiest Foods. Cucumbers are naturally low in calories, carbohydrates, sodium, fat and cholesterol. Many studies have linked it with lower blood pressure because it promotes vasodilation (widening of the blood vessels) and the vitamin K in cucumbers is also known to be essential in the blood-clotting process.

Ingredients
- 750-850 grams cucumbers (peeled)
- 4 tbsp sour cream
- 1 tablespoon apple cider vinegar or lemon juice (or vinegar)
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 bunch dill or chives (optional)
Instructions
- Peel cucumbers and cut into thin slices. Place in a bowl, sprinkle with salt and let stand for about 10 minutes. They will release some water, which you will need to discard.
- In a separate bowl mix sour cream, sugar and apple cider vinegar or lemon juice. Pour over the cucumbers, mix well. Garnish with fresh dill or chives. Keep refrigerated.
