Cream of Broccoli Soup Done in One Pot / Krem z Brokułów Wykonany w Jednym Garnku

Ingredients
- 1 lb. broccoli
- 1 medium carrot (peeled and washed)
- 1 celery stalk (washed)
- 1 medium yellow onion (peeled and washed)
- 1 medium parsley root (peeled and washed)
- 1-2 cloves garlic (minced)
- 1/4 small celery root (peeled and washed)
- 1 Liter water (or vegetable broth)
- 1 vegetable cube
- 1/4 cup half and half or milk
- 1 pinch salt to taste
- 1 pinch black ground pepper to taste
Instructions
- In a large pot place butter and oil over medium heat. Add peeled and cut or chopped onion, celery and garlic. Fry until the onion is translucent.

- Peel and rinse all the vegetables, then cut them in to small pieces. Add the vegetables and the vegetable cube in to the onion, garlic and celery. Add 1 l of water and bring to boil. Simmer over low heat until the vegetables are half soft. About 15-20 minutes.

- Add broccoli florets and cook until soft. Season with salt and pepper. Set aside to cool off. Once soup cools off use a hand blender to make pure. Add half and half or milk. Serve with croutons and cheddar cheese. Enjoy!
