A quick, simple dish for a light breakfast. You can pack it for work or eat at home. Very colorful and healthy! You can eat it alone, on a sandwich or put on a slice of tomato or cracker. I like it on a fresh baguette spread with butter.

Ingredients

  • 500 g farmer's cheese (I used half fat farmer's cheese)
  • 1 small cucumber
  • 1 small tomato
  • 5 small red radishes
  • 1/2 small red bell pepper
  • 1 small bunch green onion or chives (optional)
  • 1 small bunch fresh dill
  • 2-3 tbsp plain yogurt or sour cream
  • 1 pinch salt and black ground pepper to taste

Instructions

  • Wash the vegetables and let try. Peel the cucumber.
  • Cut all vegetables into small cubes. Chop green onions or chives.
  • In a medium size bowl combine the farmer's cheese with all cut up vegetables. Add yogurt or sour cream.
  • Mix well. Season with salt and pepper to taste. Keep refrigerated. Enjoy!
