Ground Veal Cutlets with Fried Mushrooms / Cielece Kotlety Mielone z Pieczarkami Podsmazanymi

An aromatic dish that will satisfy the tastes of those who like old Polish, traditional cuisine. Veal provides over two times less calories than lean pork and slightly less than beef. The addition of fried mushrooms makes the dish taste more noble. Ground veal cutlets with mushrooms is one of my favorite fast lunch dishes.

Ingredients

  • 600 g ground veal
  • 300 g champignon mushrooms
  • 1 large yellow onion
  • 2-3 cloves garlic (minced)
  • 1 egg
  • 1 Kaiser roll (soaked in milk)
  • 4 tbsp. plain bread crumbs
  • 1 tsp Vegeta seasoning
  • 1 salt to taste
  • 1 pepper to taste
  • 3-4 tbsp. oil

Instructions

  • Wash and peel the mushrooms, and then dice them into small cubes. (I grate them on a coarse-mesh grater).
  • Peel the onion, cut it into cubes and then lightly brown in oil.
  • Add the grated or cubed mushrooms and fry until the liquid evaporates.
  • Place the ground veal in the bowl, add the fried but cooled mushrooms, egg, minced garlic, salt, pepper (or Vegeta) to taste.
  • Add soaked in milk but squeezed Kaiser roll. If the consistency of the meat is not solid add some breadcrumbs and mix everything thoroughly.
  • Form oval or round cutlets by rolling them in breadcrumbs.
  • Fry in hot oil.
  • Serve with mashed potatoes and beetroot salad or pickled cucumber and SMACZNEGO!
