Quick Potato Pancakes Grated in a Blender / Szybkie Placki Ziemniaczane z Blendera
Potato pancakes are one of our favorite Polish dishes. Golden and crispy. They may be served with goulash, mushroom gravy or simply with apple sauce. I like mine with sour cream. So good yet so easy to make.

Ingredients
- 1 kg potatoes (preferably baking potatoes)
- 2 eggs
- 1 onion (medium)
- 1-2 tbsp all-purpose flour
- 1 salt to taste (may use seasoning salt)
- 1 pepper to taste
- 100 ml oil (for frying)
Instructions
- Peel and wash the potatoes and onion, grate on a fine grater, onions on a medium grater (May use a blender).
- When grated add eggs and flour, sprinkle with salt and pepper to taste. The batter should be quite thick, moist, but not watery.
- Heat the oil in the pan over medium heat, put small portions of the batter, forming round patties. Fry until golden brown on both sides. Drip on a paper towel. Makes about 20 pancakes. Enjoy.
