Rhubarb Cake Which Comes Out Every Time / Ciasto z Rabarbarem Które Zawsze Wychodzi

Rhubarb cake reminds me of summer. Depending on where we live, rhubarb is only available during the summer months. Lets utilize this awesome vegetable before the summer is gone. Tastes great with the morning coffee or afternoon tea. Rhubarb contains so many vitamins and minerals our bodies need on daily basis.

Ingredients

  • 1.5 stick 1.5 stick unsalted butter
  • 3/4 cup 3/4 cup granulated white sugar
  • 5 medium eggs (separated)
  • 2 cups all-purpose flour (sifted)
  • 1-2 tablespoons sour cream or plain yogurt
  • 2 teaspoons baking powder
  • 4 cups fresh sliced rhubarb
  • 1 teaspoon vanilla sugar or other flavoring (optional)
  • 1/4 cup powdered sugar (optional)

Instructions

  • Wash the rhubarb and leave to dry completely. Mix the butter with sugar and vanilla sugar to form a smooth mass. Add egg yolks and sour cream or plain yogurt and continue to mix on low speed. Add sifted flour and baking powder and mix thoroughly. Beat the egg whites until stiff and add at the very end. Mix/fold gently to get a uniform consistency. Add the rhubarb on top and press it gently with a tablespoon , it doesn’t have to be very thorough and even.
  • Pour the dough into a baking pan. I used 9 x 9 inches square pan. Bake at 300 F for about 60-90 minutes. Oven temperatures vary and you know your oven best. Bake until the dough rises nicely, it will be golden brown and the tooth pick should be dry when inserted in the middle. Cool and sprinkle lightly with powdered sugar. Enjoy!
