Veal Meatballs Stuffed with Red Pepper, Carrot and Mozzarella Cheese / Pulpeciki Cielęce Faszerowane

These meatballs are made from veal but you can use other meats including poultry. The additional stuffing made from carrot, red bell pepper, green onion and mozzarella cheese bring out the great taste in these meatballs.

Ingredients

  • 500 grams ground veal
  • 1 cup plain bread crumbs
  • 1/2 cup milk (to soak bread crumbs)
  • 1 medium egg
  • 1 small medium onion
  • 1-2 cloves garlic
  • 1 teaspoon salt (or seasoning salt)
  • 1/4 teaspoon ground black pepper
  • 500 ml water
  • 1 envelope brown gravy

Filling Ingredients

  • 1/2 medium red bell pepper (chopped up or grated)
  • 1 small carrot (shredded)
  • 2 pieces fresh green onion (cut up)
  • 20 grams mozzarella cheese (shredded)
  • 1 tablespoon oil

Instructions

  • Place bread crumbs in a mixing bowl.
  • Add the 1/2 cup of milk to the bread crumbs and soak for approximately 5 minutes.
  • After 5 minutes the bread crumbs will have absorbed the milk.
  • Add the minced garlic and grated onion and mix well together.
  • Add ground beef, egg, seasoned salt, and ground pepper.
  • Mix all well but do not over mix.
  • In a small pan sauté the carrots in a tablespoon oil for about 4 minutes, then add the cut up red bell pepper and cut up green onion. Sauté all covered for about 2 minutes and set aside to cool. When cooled add the mozzarella cheese and mix well.
  • From about a tablespoon of meat mixture form small squares. Insert about half a teaspoon of filling in side and seal the side well. Form into small balls.
  • In a large pan bring 500 ml of water to boil. Place meatballs in the boiling water. Bring to boil again add gravy and simmer for about 5 minutes turning the meatballs on all sides. Serve with mashed potatoes and beet salad. Enjoy!
