Apple Pancakes Polish Style / Racuchy

Racuchy are fluffy and fragrant pancakes with apples, which are extremely easy to make. Children and adults both love them. They are perfect for breakfast!

Ingredients

  • 4 medium to large apples (800-900 grams)
  • 200 grams all purpose flour (pre-sifted)
  • 3 large eggs
  • 200 ml milk
  • 50 grams powdered sugar
  • 1 pinch salt
  • 9 grams baking powder
  • 9 grams vanilla sugar
  • 2-3 tablespoons oil (I used canola oil)

Instructions

  • In a large bowl place the pre-sifted flour , salt, vanilla sugar, baking powder and powder sugar. Mix all well. You may use a mixer or whisk. Add half of the milk and mix well all together. Now add the remaining milk and mix all well. Add eggs and mix everything again until smooth. Make sure there are no lumps. Set the batter aside and let it rest for about 20 minutes.
  • In the mean time peel apples and grate them on a large grater. Place the grated apples into the batter and mix thoroughly. In a large frying pan heat up a tablespoon of oil. Apply double portions of dough with a tablespoon. Four large pancakes should fit in a larger pan. Fry apple pancakes over low-medium heat on both sides until golden brown. Sprinkle with powder sugar. Enjoy!
