Grated Cucumbers Pickled For Soup / Przecier Ogórkowy Na Zupę Do Słoików

The cucumber season is now pretty much over. I had some overgrown cucumbers and wasn't quite sure what to do with them. Rather than throwing them out, I decided to shred them and pickle them for a pickle soup. You can also use them for a salad with sour cream. Either way they taste great.

Ingredients

  • 2 kg ground cucumbers
  • 2 tablespoons salt (about 50 grams)
  • 1/2 head garlic
  • 1 bunch fresh dill

Instructions

  • Wash the cucumbers. You can peel them if you prefer but it is not necessary. I tried both ways and it doesn't make any difference to me. 
  • In a large bowl grate the cucumbers on a grater with large mesh and leave in the juices. Wash the dill and chop finely. Peel the garlic cloves and slice it.
  • Mix the grated cucumbers together with salt, garlic and the dill and set it aside for about 30 minutes. 
  • Fill the jars with the cucumbers together with the salt water and garlic cloves (this is of course the water released by the cucumbers). Try to have the same amount of grated cucumbers and salt water in each jar. Therefore, stir the entire contents of the bowl frequently.  The picture of the one on the left is already done as you can see and the color turns to more yellowish d/t the fermentation process.
  • Close the jars tightly and put them in a room where it will be no more than 68 degrees Fahrenheit for three days. After that move the jars into a cooler place for about 10 days. The entire fermentation process takes several days. They are ready to be used after about 10 days. If you are not going to use them for some time just leave the jars in a cool place, like the basement until ready to use.
  • During the first days of pickling, you can see jars buzzing and/or hissing slightly. The brine begins to leak from the jars of grated cucumbers. This is totally normal. Do not open the jars. They do not have to be pasteurized. Enjoy!
  • Tips : I do not add horseradish root to grated cucumbers for the winter, but it can be done. It is enough to put a piece of horseradish root at the bottom of each jar (before putting it into jars of grated cucumbers).
    You can use the following jars for the 2 kg of cucumbers:  3 jars of about 720 ml, 4 jars of about 540 ml, 5 jars of about 430 ml, 6 jars of about 360 ml and 7 jars of about 300 ml.
