I am very grateful for ready ground dry poppy seeds which are a time saver. Those poppy seeds do not need to be ground anymore, and, are ready to use. This homemade poppy seed filling has a wide range of applications. You can use it for sponge cakes, buns and poppy seed cake. Perfect for Christmas poppy seed dumplings, Kutia, rolls, or mixed cheesecakes. You can keep the ready-made poppy seed filling in a glass container in the refrigerator for up to 7 days. You can also divide the poppy seed filling into portions and freeze it for up to 6 months. Once you make this recipe, you will never go back to the store bought poppy seed fillings.

Ingredients

  • 400 grams ground dry poppy seeds
  • 500 milliliters milk (may use water)
  • 300 grams honey
  • 100 grams butter
  • 4 egg whites beaten
  • 1 teaspoon almond extract (optional)
  • 1 teaspoon rum extract (optional)

Dried fruit and nuts I used

  • 100 grams almonds (chopped)
  • 100 grams walnuts (chopped)
  • 100 grams raisins (presoaked in alcohol or in water)
  • 100 grams candied orange peel

Instructions

  • Gather all your ingredients.
  • Bring milk to boil and lower the heat to low.
  • Slowly pour poppy seed in the hot milk stirring constantly. You will notice the poppy seed absorbing the milk quickly. Stir for about 2 minutes until the milk is all absorbed.
  • Add the butter to the warm poppy seed so you don't have to melt it. It will melt in the warm poppy seed.
  • Add all the dried fruit and nuts and mix all well.
  • Finally, add the honey and mix well again.
  • Depending on what you will be making with the filling, you may have to add additional ingredients such as shredded apples and /or egg whites. I was about to make a poppy seed roll and added 2 beaten egg whites. Make sure to add those ingredients at the end, once the poppy seed is cooled. Enjoy!
