White Borscht / Żurek

Very basic recipe for zurek which is so easy to make and so delicious not only for Easter but any time.

Ingredients

  • 1.5 L water
  • 500 ml sour dough
  • 4 potatoes
  • 10 dkg smoked sausage
  • 3 slices smoked bacon
  • 4 hard boiled eggs
  • 1 yellow onion
  • 1 tsp horseradish (optional)
  • 1 tsp marjoram
  • 2-3 cloves garlic
  • 2 bay leaves
  • 3-4 grains allspice
  • 1 carrot (small)
  • 1 salt to taste
  • 1 pepper to taste

Instructions

  • Peel the potatoes, rinse and dice, grate the carrots as well using large grater.
  • Bring water to boil adding herbs, bay leaves, marjoram, garlic, place potatoes and carrots.
  • When potatoes and carrots are soft pour the sour dough and bring to a boil.
  • Cut the bacon and sausage into small cubes and fry until golden brown. Add chopped onions and fry a bit longer until the onion is is golden. Add to the soup, season with salt, pepper, horseradish and hard boiled eggs. Enjoy!
