Vegetable Broth / Rosol z Warzyw
Vegetable broth is the best base for soups and sauces. This vegetable broth with the addition of several herbs and spices can also be divided into portions and frozen.

Ingredients
- 2 L water
- 2 carrots (medium)
- 1 parsley root (medium)
- 1/4 celery root
- 1 onion (medium)
- 1/4 Leek (medium - large)
- 3 cloves of garlic
- 2 stalks of celery
- 1/4 bunch fresh parsley leaves
- 2 dried mushrooms (optional)
- 2 bay leaves (optional)
- 3 allspice (optional)
- 1/4 tsp peppercorns
- 1 tbsp salt
Instructions
- Wash all the vegetables well. Peel carrots, parsley root and celery root and place in a large pot. You can cut the vegetables if you prefer. They will cook much quicker. Place the parsley leaves, a piece of leek, celery stalk washed and cut into smaller pieces. Place washed and peeled garlic cloves as well as the onion and a few dried mushrooms (optional) in a pot. Add spices.
- Pour two liters of water into the pot. Cover with a lid and cook over high heat until the water starts to boil. Then turn the heat down to minimum and simmer over low heat for approximately 1 and 1/2 to 2 hours. If the vegetables were chopped finely or grated, then the broth can be cooked in about half the time.
- The finished vegetable broth should be strained through a strainer. You can pick the vegetables first or strain the broth straight into another pot. The broth can be kept in the fridge in a jar for up to ten days.
- I recommend freezing some of the broth in freezer bags. It's a great, convenient and very economical way to a quick homemade vegetable broth.
