Strawberry Compote for Winter / Kompot z Truskawek na Zimę

Delicious, aromatic strawberry compote for winter. Strawberry season is very short so you have to use it to the maximum, then in winter enjoy the memories of summer. Compotes are very easy to prepare and do not require much work, so it's worth pasteurizing them for winter.

Ingredients

  • 4 kg ripe fresh strawberries
  • 9 tablespoons granulated white sugar (3 tbsp per 0.9 l jar)
  • 3 L fresh, clean water
  • 1/2 tablespoon lemon juice (per jar)

Instructions

  • Wash the strawberries in a strainer thoroughly, and remove the stalks. Place strawberries in steamed/scalded jars.
  • Pour 3 tablespoons of sugar into each jar over the strawberries. Add lemon juice for the strawberries to retain the nice red color.
  • Fill each jar with cold fresh water. Wipe the thread thoroughly and tighten the lid.
  • Arrange the jars in a pot of water lined with a cloth on the bottom to prevent from breaking during pasteurizing process. Pasteurize for 20 minutes.
  • Remove from the pot and place upside down until completely cooled.
  • Prepared compotes can stay in a dry, cool and dark place for up to two or three years.
