Stefanka Cake / Ciasto Stefanka
Stefanka on biscotti's topped with grit filling. The cake is very simple and does not require baking. Perfect for quick preparation. The biscotti soften over time under the influence of the filling and can be cut nicely. Grit filling is delicious, buttery and creamy, topped with chocolate and sprinkled with chopped walnuts for contrast. Yields 8 servings.Pan size I used: 20cm x 20cm x5cm.

Ingredients
Ingredients for filling
- 1 package biscotti's or tea biscuits (small)
- 1 L milk
- 250 grams baking margarine or butter
- 1 package vanilla sugar or a few drops of vanilla extract
- 3 tablespoons baking cocoa
- 220 grams granulated white sugar190 grams grits
- 190 grams grits
Ingredients for chocolate glaze:
- 100 grams unsalted butter
- 3 tablespoons powdered sugar
- 3 tablespoons baking cocoa
- 3 tablespoons milk or water
Sprinkle:
- 100 grams chopped walnuts or coconut
Instructions
- Line your baking pan with parchment paper. I used 20cm x 20cm x5cm baking pan. Place biscotti's on the bottom of the pan evenly.
- Add margarine, sugar, cocoa and vanilla sugar to the milk. Bring everything to a boil. When the margarine melts, add the grits gradually. Cook for about 3-4 minutes stirring constantly, until the mixture thickens.
- Pour the hot mixture/filling over the biscotti.
- Place a layer of biscotti on top of the filling.
- Now you are ready to make the chocolate glaze. Melt the butter in a pan, add powdered sugar, baking cocoa, and the milk. Bring it to boil over low heat until well dissolved. Cover the cake with chocolate glaze and decorate it with chopped walnuts, coconut flakes or sugar sprinkles.
- Refrigerate for at least 3 hours, preferably overnight. When set cut into small squares and enjoy!
