Spinach Soup with Rice / Zupa ze Swiezego Szpinaku z Ryzem Zabielana
Spinach is an excellent source of vitamin K, vitamin A, vitamin C and folate as well as being a good source of manganese, magnesium, iron and vitamin B2. Vitamin K is important for maintaining bone health and it is difficult to find vegetables richer in vitamin K than spinach. Very simple soup to make, healthy and delicious.

Ingredients
- 1.5 L broth (may use water)
- 3-4 tbsp rice
- 1 carrot (medium)
- 1 parsley root (medium)
- 1/4 celery root (medium)
- 1 onion (small)
- 2 cloves garlic
- 300 g spinach (fresh)
- 2 tbsp butter
- 2 tbsp lemon juice
- 1/2 cup sour cream (may use half and half)
- 1 salt to taste
- 1 pepper to taste
- 1 hard boiled egg per person (optional)
Instructions
- Wash and peel all the vegetables. In a saucepan, start melting the butter or you may use oil. Grate parsley, carrots, celery root and chop onion. Mix the vegetables and saute them uncovered for 20 minutes. Pour two cups of broth/water into the pot. Add rice, peeled and sliced 2 cloves of garlic add salt and pepper to taste. Cover the soup with a lid and cook on low heat for 15 minutes.
- Vegetables should already be soft. Rinse the spinach under cold running water and put in in the soup. You can also use good quality frozen spinach from the box. At first, the spinach will fill the entire pot, but after a few minutes the spinach will reduce its volume. Place the rest of the broth/water into the pot. Cover the pot with a lid. Cook the soup for another 10 minutes over low heat.
- Finally, add 2 tablespoons of freshly squeezed lemon juice and the sour cream and/or half and half. Stir the soup and turn it off as soon as it boils again. You can cook hard-boiled eggs at any time while preparing the soup or after cooking the soup. Decorate with a cut lengthwise hard boiled egg. Enjoy and Smacznego!
