Shortcrust Pastry Cake with Apples / Szarlotka na Kruchym Cieście

There are many recipes for apple cakes. However, I highly recommend the most traditional Polish version to you. It is certainly an extraordinary cake and very well known. It is made with crispy buttered dough and lot's of fresh apples.

Ingredients

Ingredients for the dough:

  • 400 grams Krupczatka flour (or all purpose flour)
  • 100 grams powdered sugar
  • 1 pinch salt
  • 1/2 teaspoon baking powder (optional)
  • 4 egg yolks
  • 200 grams unsalted butter

Ingredients for the filling:

  • 2 kg firm apples (I used Gala apples)
  • 2 lemons (juice out of 2 lemons) (may substitute 1 lemon and 1 lime)
  • 100 grams powdered sugar
  • 50 grams potato flour (may substitute for corn starch)

Instructions

  • Knead flour, sugar, pinch of salt and butter (cut into small pieces) then add egg yolks and baking powder. Mix into a uniform dough by hand or with a mixer or food processor.
  • Form a ball of dough. Cut the dough in half and the the one half into another half. So you have 3 pieces of dough. The largest one will be for the bottom of the baking pan. Second one will be for the sides of pan. Third piece will be shredded on the top of the apples.
  • Wrap the 1/3 piece will foil and place it in the freezer.
  • Line baking pan with parchment paper. I used 24 cm x 24 cm x 5 cm.
  • Place half of the dough on the bottom of the pan. I used a spoon to smooth it out. Place the 1/3 of the dough on the sides of the pan and smooth it with a spoon.
  • Prick the bottom of the dough with a fork so that bubbles do not form. Now place the pan in the refrigerator for about an hour so that dough can rest.
  • Wash the apples, peel them, remove the seeds and cut them into small cubes. Place lemon juice on the apples so that do not get dark. Place the apples onto a large pan, add powdered sugar and potato flour and simmer until there is no more water and the apples turn to a marmalade consistency. Remove from heat and cover with a lid.
  • After an hour remove the pan with the dough from the refrigerator and place it in the preheated oven for about 15 minutes. The temperature should be set to 180 degrees C or 350 degrees F.
  • Now you are ready to place the apple filling in to the shortcrust pastry. Remove the remaining dough from the freezer and shred it on the large mesh over the apple filling.
  • Place the cake in to a preheated oven at 350 degrees F or 180 degrees C for about 40-45 minutes. Oven temperatures do vary.
  • Once the cake is golden brown, remove it from the oven and let it cool completely. You may want to sprinkle it with powdered sugar when cooled. Enjoy and SMACZNEGO as always.
