Roasted Corned Beef/ Wołowina Peklowana Pieczona
Corned beef is a classic dish which I make for Saint Patrick’s Day. However, it can also be made for Easter, Christmas and New Year’s as well as many other celebrations. Roasted Corned Beef has a delicious crispy crust with a rich, tender, and juicy center. This is a very simple recipe which you and your family will love.

Ingredients
- 3 pounds Corned Beef Brisket with seasoning packet
- 3 medium potatoes washed and cut in half (I used red potatoes)
- 2 medium carrots (washed and peeled)
- 2 bay leaves (optional)
- 3 grains allspice (optional)
Instructions
- Preheat the oven to 325 F. Rinse the meat under cold running water. Rinsing will not change the flavor of the meat since the whole piece has been brined.
- Place the meat on top of the grate fat side up. Fill the bottom of the roasting pan with water level with the bottom of the grate. Add bay leaves and allspice. Cover the pan with the lid or aluminum foil for two-thirds of the baking time. Bake uncovered for the remainder of the time.
- Add potatoes and carrots about 40 minutes before the end of the roasting time. Any vegetable can be added to the brisket. They will need approximately 40 minutes to bake.
- Cook the brisket for 1 hour per pound for a 2 to 3-pound brisket. A larger brisket (4 to 6 pounds) will take 3 to 3 1/2 hours. It’s safe to eat when it reads 145°F when tested with an instant-read thermometer.
- Let the brisket rest before slicing. It will hold the juices if you let it sit 15 to 20 minutes.
