Quick mushroom soup with noodles is a great idea for a Sunday dish as well as any other day. It is not only delicious, but also a filling. Most often it is cooked on meat and/or vegetable stock. This recipe for mushroom soup with noodles is not too complicated or time consuming. It's made by using bullion cubes instead of making your own broth. You can make it under 30 minutes.

Ingredients
- 2 L vegetable stock (may use water)
- 2 vegetable bullion cubes
- 450 grams champignon mushrooms
- 1 medium yellow onion
- 2 tbsp unsalted butter or oil
- 150 grams pasta (e.g. small shell, bow or elbow)
- 50 ml half and half
- 1 teaspoon corn starch or all purpose flour mixed with water (to thicken the soup)
- 1/2 teaspoon soy sauce or mushroom magi
- 1 pinch salt or to taste
- 1 pinch black ground pepper to taste
Instructions
- In a big pot bring water or broth to boil. Add bullion cubes. Pour the noodles onto the boiling soup and cook until tender.
- Wash mushrooms, cut into slices and fry in oil or butter.
- Then chop the yellow onion and add into the mushrooms. Fry together until onion becomes translucent.
- Puree half of the mushrooms and onions.
- Transfer to broth and bring to boil.
- Season to taste with soy sauce salt and pepper.
- Now add the corn starch and half and half.
- Simmer until pasta is tender. Enjoy!
