Potato soup is a delicious and filling meal for an autumn or winter dinner. This soup is extremely simple and quick to make. You can cook it with or without meat. This is the most basic recipe.

Ingredients

  • 5-6 medium potatoes
  • 1 carrot
  • 1 l smoked meat stock
  • 1 stick smoked sausage
  • 1 onion
  • 2 bay leaves
  • 1 grains allspice
  • 2 cloves squeezed garlic
  • 1 tbsp marjoram
  • 1 tsp salt
  • 1 pinch black pepper
  • 100 ml half and half
  • 1 tbsp olive oil

Instructions

  • Peel, potatoes and carrots. Dice the potatoes into approximately 2 cm cubes, the carrots into slices and add to the smoked meat stock (you can also use broth). Add the pressed garlic, bay leaves and allspice and cook until tender. Dice the onion into small cubes and fry in olive oil. Dice the sausage and fry it as well. Add to the cooked potatoes together with the onion. Simmer over low heat until the potatoes are soft, season, add marjoram. Season with cream. Enjoy!
