Potato Dumplings with Butter and Breadcrumbs /Kopytka w Bulce Tartej
Kopytka (means “little hooves”) are a kind of potato dumpling in Polish, Belarusian and Lithuanian cuisines. They are similar to Italian gnocchi and German Schupfundel. Kopytka can be either a main dish or served on the side. Kopytka can be served savory baked with cheese, fried bacon, fried onion, or with a variety of sauces such as goulash or a mushroom sauce or simply with butter and fried breadcrumbs.

Ingredients
- 1 kg boiled potatoes (preferably baking potatoes)
- 230 g all purpose flour (sifted)
- 3 tbsp potato flour (sifted)
- 1 egg
- 1 tsp salt
- 100 g butter
- 3 tbsp bread crumbs
- 5 L water
Instructions
- Boil potatoes until soft, about 30 minutes over medium heat. Then let them cool completely and squeeze through a potato press, if you do not have one, you can also use a meat grinder. Add the egg to the smooth potato mixture, place the flours mix quickly to form the dough. Cut the ready dough into smaller pieces, with each hand roll to the thickness of the finger, coat in flour, with a sharp knife cut into diamond shapes at an angle. Pour about 5 L of water to a pot, add salt to the water. Place the dumplings in the boiling water. Cook 1/3 serving at a time, as soon as the dumplings rise to the top, take it out of the pot. Brown bread crumbs in butter and pour over the top of the dumplings. Serve warm. Enjoy!

I tried making them but didn’t come out quite like it. Not sure if the potatoes used have anything to do with it. They were too watery.
