Pickled Cucumber Soup with Rice / Zupa ogorkowa z Ryzem Zabielana

Delicious homemade pickled cucumber soup whitened with cream and cooked with white rice and dill is a taste from my childhood.

Ingredients

  • 2.5 L water
  • 5 pickled cucumbers
  • 1 carrot (medium)
  • 1 parsley root (small - medium)
  • 1/4 celery root (small)
  • 1 onion (small)
  • 1-2 cloves garlic
  • 1/4 leek
  • 2 bay leaves (optional)
  • 3 grains allspice
  • 2 tbsp sour cream (or 1/2 cup half and half)
  • 4-5 tbsp rice
  • 1/4 bunch fresh dill
  • 1 salt to taste
  • 1 pepper to taste

Instructions

  • Place water into the pot. Add salt, pepper, bay leaves, allspice and bring to a boil over medium heat. Grate peeled carrots, celery root and parsley root on a large grater. Cut the washed leek in half and onion and garlic into cubes. Place all vegetable in a pot with boiling water.
  • When the vegetables are semi soft, place the rice in the soup and continue cooking. When the rice is about half way cooked add the grated pickled cucumbers and simmer over low heat for about 10 minutes. Finally add the sour cream well beat or the half and half. Mix well. Cut the dill finely and add it to the soup at the very end. Serve hot and Smacznego!
