Pancakes with Apples and Cinnamon / Racuchy z Jabłkami i Cynamonem
Delicious apple and cinnamon pancakes. They are very quick and easy to make and taste delicious especially while they are still warm. Made from dough without the addition of yeast. They are ideal for breakfast or afternoon tea for children and adults both.

Ingredients
- 3 eggs
- 380 grams all-purpose flour
- 650 grams apples (cut into small pieces)
- 450 milliliters milk or kefir
- 30 grams sugar
- 1 pinch salt (optional)
- 1 teaspoon baking powder or baking soda
- 1/2 teaspoon ground cinnamon
- 150 grams olive oil (for frying)
- 2 tablespoons powdered sugar for sprinkling (optional)
Instructions
- Separate the egg whites from the yolks and beat until stiff.
- In a large bowl mix the milk/kefir, egg yolks, flour, sugar, baking powder and salt until smooth. Batter should be quite thick.
- Add the apples (cut into small pieces) and cinnamon.
- Gently mix with a spoon. Add beaten egg whites and stir to form a uniform consistency.
- Fry on both sides until golden brown.
- Once cooled, sprinkle with powdered sugar. Enjoy!
