Oatmeal Cookies with Dried Fruit / Ciasteczka Owsiane z Owocami Suszonymi
Homemade oatmeal cookies are not only healthy, but also very delicious and filling. You may add nuts and variety of fruits to make them to your preference. Yields approximately 2 dozen cookies.

- 1 large bowl
- 1 spatula
- 1 cookie sheet
- 1 sheet of parchment paper
- 1 cookie scooper
Ingredients
- 3 cups oats
- 1 - 1.5 cups sifted all purpose flour
- 2 large eggs
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup raisins
- 1/4 cup mixed dried berries ( cranberries, blueberries, cherries)
- 1/4 cup milk chocolate chips
- 1/2 teaspoon salt (optional)
- 1/4 cup vegetable oil
- 4 tablespoons unsalted butter
- 1 teaspoon vanilla sugar
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350 F.In a large bowl, beat oil, butter and sugars by hand or use a mixer on medium speed of electric mixer until creamy.
- Add eggs and vanilla, beat well. Add flour little by little, baking powder, cinnamon and salt, mix well. At the end add oats, raisins, mixed dried berries and mix well. Drop dough by use of a scooper or rounded tablespoonful's onto ungreased cookie sheet. I used my hands to form balls. I used parchment paper to cover cookie sheet.
- Bake approximately 10-15 minutes or until light golden brown. Oven temperatures may vary. Cool few minutes on cookie sheets.
- Store tightly covered. Enjoy!
