No Bake Cheese Cake with Strawberries / Sernik na Zimno z Truskawkami

The first earliest recorded Greek cheesecake recipe was made by the writer Athenaeus in 230 A.D. This is the oldest known surviving Greek recipe. The recipe itself was pretty simple: pound the cheese until it is smooth mix it in a brass pan with honey and spring wheat flour, heat the cheesecake “in one mass”, allow to cool, then serve.
When Romans conquered Greece, they modified the cheesecake recipe by adding crushed cheese and eggs, and they served it warm. They called their cheesecake “libuma” and served it on special occasions. Eventually, the recipe spread to Northern and Eastern Europe. Locals began to experiment, with every region using its native ingredients to put their own unique spin on cheesecake. Through the years, the ingredients and the process of baking have evolved, and now there are countless recipes for how to prepare cheesecake, but everyone still owes this divine treat to the Greeks.

Ingredients

  • 1 package Biscotti for the bottom of the pamn (120 g Petitki Biszkopty)
  • 2 8 oz cream cheese
  • 2 8 oz whipped cream
  • 1/2 cup Sugar
  • 2 Envelopes of unflavored gelatin (1/4 oz each)
  • 1-2 Envelopes of vanilla sugar (Optional)
  • 3/4 cup Water
  • 1.5 lbs Strawberries or other fruit for sides and the top (May use variety of fruit)
  • 2 Envelopes of flavored strawberry gelatin Prepared as per package instructions

Instructions

  • Place the biscotti on the bottom of the pan as shown above. I place about a tsp of mandarin/orange juice on each biscotti so that they are moistened and to prevent them from rising to the top once the mixture is poured over. Mix the cheese cream with sugar and vanilla sugar until a uniform consistency forms. Then start adding portions of whipped cream slowly and mixing consistently. Bring to boil the 1/4 cup of water and stir in the unflavored gelatin until the lumps are gone (do not boil the gelatin). 
  • Pour the cooled gelatin into the mixture and stir again until all incorporated. Arrange halves of strawberries on the sides of the spring form pan. Now you are ready to pour the mixture over the biscotti and strawberries. Chill in the refrigerator at least 4-6 hours, preferably over night. Once all is set decorate with strawberries on the top, or your favorite fruits how ever you like. Once your flavored gelatin is cooled, you may pour it over the fruit by using a ladle in 3 separate layers. I do mine by placing 1-2 ladles of gelatin at a time and not all at once. It allows the fruit to stay in place instead of rising to the top. Chill again until the gelatin sets. Enjoy!
