No Bake Cheese Cake with Mandarin Oranges and Gelatin / Sernik na Zimno z Mandarynkami)
Mandarin orange cheesecake is a simple yet delicious cheesecake bursting with juicy mandarins on the top in orange gelatin. It is a really refreshing cheesecake, and even better, it is no bake.

Ingredients
- 2 packages cream cheese (226 g each)
- 2 containers whipped cream (226 g each)
- 1/4 cup sugar
- 2 packets unflavored gelatin
- 1-2 packets vanilla sugar (9 g each)
- 1/4 cup water (to dissolve the gelatin)
- 2-3 cans mandarin oranges (441 grams each)
- 2 packages orange flavored gelatin (prepared as per package instructions)
Instructions
- Place the biscotti on the bottom of the pan. I used a 12 inch spring form pan. I placed about a teaspoon of mandarin/orange juice on each biscotti so that they are moistened and to prevent them from rising to the top once the mixture is poured over.
- Mix the cheese cream with sugar and vanilla sugar until a uniform consistency forms. Then start adding portions of whipped cream slowly and mixing consistently. Bring to boil the 1/4 cup of water and stir in the unflavored gelatin until the lumps are gone (do not boil the gelatin).
- Pour the cooled gelatin into the mixture and stir again until all incorporated. Arrange mandarin oranges on the sides of the spring form pan.
- Now you are ready to pour the mixture over the biscotti and mandarin oranges. Chill in the refrigerator at least 4-6 hours, preferably overnight. Once all is set decorate with mandarin oranges on the top however you like. Once your flavored gelatin is cooled, you may pour it over the fruit by using a ladle in 3 separate layers. I do mine by placing 1-2 ladles of gelatin at a time and not all at once. It allows the fruit to stay in place instead of rising to the top. Chill again until the gelatin sets. Enjoy!
