No Bake Cheese Cake with Fruit / Sernik na Zimno z Owocami
Every region of the world also has its own take on the best way to make the cheese cake. Italians use ricotta cheese, while the Greeks use mizithra or feta. Germans prefer cottage cheese, while the Japanese use a combination of cornstarch and egg whites. There are specialty cheesecakes that include blue cheese, seafood, spicy chilies and even tofu! In spite of all the variations, the popular dessert’s main ingredients – cheese, wheat and a sweetener –remain the same.No matter how you slice it, cheesecake is truly a dessert that has stood the test of time. From its earliest recorded beginnings on Samos over 4,000 years ago to its current iconic status around the world this creamy cake remains a favorite for sweet tooth of all ages.

Ingredients
- 1/2 package Biscotti for the bottom of the pan (about 60 g Petitki Biszkopty)
- 8 ounces cream cheese
- 8 ounces whipped cream
- 1/4 cup granulated sugar
- 1 envelope unflavored gelatin (1/4 oz)
- 1 package vanilla sugar (Optional)
- 1/2 cup water
- 1/2 pound strawberries or other fruit for the top (May use variety of fruit)
- 1 package flavored gelatin (small) (Prepared as per package instructions)
- 1 can peaches (small)
Instructions
- Place the biscotti on the bottom of the pan. I used a 9 inch spring form pan. Place about a teaspoon of peach juice/syrup on each biscotti so that they are moistened and to prevent them from rising to the top once the mixture is poured over. I used peach syrup from the peach can that I have used to decorate the top.
- Mix the cheese cream with sugar and vanilla sugar until a uniform consistency forms. Then start adding portions of whipped cream slowly and mixing consistently. Bring to boil the 1/2 cup of water and stir in the unflavored gelatin until the lumps are gone. Pour the cooled gelatin into the mixture and stir again until all incorporated.
- Now you are ready to pour the mixture over the biscotti and chill in the refrigerator at least 4 hours, preferably over night.
- Once all is set decorate with peaches and strawberries, or your favorite fruits how ever you like. Once your flavored gelatin is cooled, you may pour it over the fruit by using a ladle.
- I do mine by placing 1-2 ladles of gelatin at a time and not all at once, about 3 times. It allows the fruit to stay in place instead of rising to the top.
- Chill again until the gelatin sets. Enjoy!
