Kolaczki (Eastern European pastries with fruit fillings)
There is definitely a lot of debate as to who invented kolaczki or where they originated from. The Polish claim it but so do the Slovaks, Croatians, Czechs and others. I don’t remember eating them as a child growing up or while living in Poland. I was first introduced to Kolaczki by my Polish/American friend who shared this great recipe with me. I have started making them ever since and the entire family loves them. Kolaczki can be round like a thumb-print style, square or diamond- shaped, or like the traditional crescent filled.

Ingredients
- 8 ounces cream cheese room temperature
- 2 sticks butter
- 1 egg yolk
- 1 tablespoon milk
- 1 tablespoon granulated sugar
- 1 and1/2 cup all-purpose flour sifted
- 1/2 teaspoon baking powder
- 1 12 ounce can fruit/pie filling
- 2 tablespoons powdered sugar for dusting
- 1 package vanilla optional
Instructions
- Beat room temperature butter, milk, granulated sugar and cheese at medium speed in a stand mixer or with a hand mixer until thoroughly combined. Beat in egg yolk.
- Sift in baking powder and flour and stir with a spatula or with the mixer on low until combined. The dough will be stiff.
- Wrap in plastic wrap and chill for 30 minutes to an hour
- Preheat oven to 350 degrees Fahrenheit
- On a lightly floured surface, roll out dough to ¼ inch thickness. Using a 2 inch cookie cutter, cut cream cheese dough into circles. Place on a baking sheet, with each cookie 1 inch apart.
- Using your thumb, make a gentle thumbprint in the center of each unbaked cookie. Spoon a bit of fruit filling on to each round (about 1 teaspoon) and place in the oven.
- Bake for 12-15 minutes, until lightly browned.
- Remove from the oven and place cookies on to wire cooling racks to cool completely. When cool, sprinkle with powdered sugar and enjoy.
