Fried Red Cabbage with Carrot and Apples / Zasmazana Czerwona Kapusta z Marchewka i Jablkiem

Red cabbage is a very old traditional recipe. This dish comes from Silesia and I believe that next to Silesian dumplings it is one of the most delicious dishes of regional cuisine. Traditional red fried cabbage is usually served with duck or goose but may very well be served as a side to any dish.

Ingredients

  • 1 head medium red cabbage
  • 1 large yellow onion
  • 1 carrot
  • 2 apples (sour)
  • 3 tablespoons oil
  • 2-3 bay leaves
  • 3 grains allspice
  • 2 tablespoons apple cider vinegar (may substitute with lemon)
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions

  • Shred the cabbage.
  • Place it in a pot, pour water so that it covers the cabbage, add salt, bay leaves and allspice. Cook until tender, which should take approximately 35 minutes. When the cabbage is soft, drain off the water.
  • Meanwhile, chop the onions finely. Peel the apples and carrot and grate them on a large-mesh grater.
  • Heat the oil in a large frying pan, add the onion, lightly salt it and fry until soft.
  • Enjoy your meal!
