Fresh Tomato Soup with Poured Dumplings / Zupa Pomidorowa ze Swieżych pomidorow z Lanym Ciastem

By far the best tomato soup made from fresh picked tomatoes from the bush, ripened in the sun, without the preservatives and artificial fertilizers.

Ingredients

  • 1.5 kg fresh tomatoes
  • 1 tbsp butter

Vegetable Broth

  • 2 l water
  • 2 carrots
  • 1/4 celery root
  • 1 parsley root
  • 1/2 leek
  • 1 onion (optional)
  • 1-2 tbsp salt to taste
  • 1 pinch pepper to taste

Poured Dumplings

  • 4 tbsp all purpose flour
  • 2 eggs
  • 1 pinch salt

Instructions

  • Wash and peel all vegetables. Pour water into the pot, add all vegetables and add salt. Simmer over low heat until vegetables are tender.
  • Place butter into another pot, washed and cut tomatoes into quarters and stew (stirring occasionally) over medium heat until the tomatoes are simmered down. (They will liquefy)
  • When the broth is ready remove the vegetables. Strain the tomatoes using a sieve and place in the broth.
  • For the poured dumplings you need to mix the flour with the eggs, add a pinch of salt and mix until a uniform consistency forms. If to thick add a tsp of water and if too thin add flour. Slowly pour the batter in to the simmering soup and gently stirring. Simmer over low heat for about 2-3 minutes longer. Enjoy
