Fish in Vegetables / Ryba po Grecku

Juicy fish accompanied by stewed vegetables is a classic of Polish cuisine! There can not be a Christmas Eve table without it. Even though it's name suggests it's Greek Fish, It really has nothing to do with Greece. You can serve it both hot and cold - it tastes delicious either way. Below you will find an easy recipe for this dish which is passed down from generations.

Ingredients

  • 1 kg white fish (I used Cod fish)
  • 800 grams carrots
  • 250 grams parsley roots
  • 250 grams celery root
  • 3 medium yellow onions
  • 1 red bell pepper
  • 200 ml tomato paste
  • 4 bay leaves
  • 6 grains allspice
  • 3 tablespoons olive oil
  • 3 tablespoons all purpose flour
  • 1 pinch salt (to taste)1
  • 1 pinch black ground pepper (to taste)
  • 200-300 ml vegetable broth or water

Instructions

  • Heat the oil in a frying pan and add onions for few minutes until translucent.
  • Add the remaining shredded vegetables (excluding red bell pepper) to the onion, fry for a few minutes, add allspice and bay leaves, broth or water. Cook for 10 minutes. Then add the cut up red bell pepper.
  • After this time, remove some of the liquid, mix it with the tomato concentrate and add to the vegetables. Simmer over low heat for about 15 minutes max.
  • Season the fish with salt and pepper and divide into smaller pieces.
  • Dip the fish in flour and fry until golden brown.
  • In the serving platter alternate by placing the vegetables in the bottom, then fried fish and then the vegetables and fish and vegetables. Cover and refrigerate overnight. Enjoy!
