Ingredients
For Crepes
- 250 g All Purpose Flour
- 500 ml Milk
- 1 Egg
- Salt to taste
- Oil
For Filling
- 200 g Sauerkraut
- 200 g White Mushrooms
- 250 ml Vegetable Broth
- 1 Medium Onion
- 1-2 Cloves of garlic
- 10 g Parsley Leaves
- Salt to taste
- Pepper to taste
- 2-3 Allspice
- 1-2 Bay Leaves
- Olive Oil
For Coating
- 2 Eggs
- Bread Crumbs
Instructions
For Filling
- Cut the onion into small cubes and mince garlic. Chop the parsley finely and cut the mushrooms into small pieces. Fry onion and garlic in hot olive add mushrooms, season with salt and saute until the water evaporates. Then add the chopped sauerkraut and chopped parsley. Mix all very well together and saute for about 10 minutes over low heat. Then pour the broth, add allspice and bay leaves. Simmer stuffing covered for about 30 minutes until water evaporates . Then let the stuffing cool completely.
For Crepes
- In a bowl, combine flour, egg, and a pinch of salt. Add the milk slowly into the batter mix all with a whisk until a uniform consistency forms without any lumps. Grease the pan and fry thin crepes on both sides until golden brown. You may add the oil into the batter and don’t have to grease the pan.
To Roll the Croquettes
- Place about 1-2 tablespoons of stuffing on each crepe. Fold the sides of the pancakes inside and roll up the croquettes. Bread croquettes in well beaten eggs and breadcrumbs. Fry in hot oil on all sides until golden brown. Enjoy!
