Crepes with Farmer's Cheese / Naleśniki z Serem
These crapes are paper thin, fluffy and filled with farmer's cheese and vanilla. These crepes are delicious, perfect for breakfast, lunch and dinner. They are inexpensive and super easy to make. This recipe will yield 16-17 crepes.

Ingredients
Ingredients for the batter
- 200 grams 200 grams pre-sifted all purpose flour
- 500 ml 500 ml milk ( I used 2%)
- 3 large eggs
- 2-3 tbs oil or melted butter
- 1 pinch salt
Ingredients for cheese filling
- 433 grams farmer's cheese
- 3 tablespoons granulated white sugar (add more if you like it sweeter)
- 150 ml whipping cream
- 1 small egg yolk
- 1 package vanilla sugar
Instructions
- Place the eggs in a large mixing bowl. You can use a mixer or whisk. I prefer to use a whisk. Beat the eggs well, add salt and whisk again. Add 2 tablespoons of flour and whisk until there are no lumps. Add about 1/4 of the milk and whisk again. Repeat the process by alternating whisking the flour and the milk until all flour and milk are incorporated into the batter. At the end, add oil and whisk again, making sure there are no lumps.
- Heat up the frying pan over low medium heat and brush the remaining oil on to the pan. Usually the first crepe will stick to the bottom of the pan then the remaining ones will not stick since there is oil in the batter.
- Pour a portion using a ladle, gently making circular movements with the pan to distribute them evenly. When the surface of the batter is dry, turn it over and fry on the other side. (About 2 minutes per side).
- In a medium bowl mix the whipping cream with sugar and egg yolk. Start adding portions of the farmers cheese until desired consistency.
- When the crapes cool off spread the cheese cream filling on half of each crepe, fold the other half of the crape over, and fold the crape in to another half, forming a triangle. Place on a platter and serve sprinkled with powdered sugar or fresh blended berries. Enjoy!
