Cream of Broccoli Soup with Noodles / Zupa Krem z Brokułów z Makaronem

Cream soup which is perfectly complemented by egg shell noodles.

Ingredients

  • 1 medium broccoli
  • 1 parsley root
  • 2 carrots
  • 1 small onion
  • 1/4 leek
  • 1/4 celery root
  • 800 ml water
  • 2 cloves garlic
  • 1 pasta of your choice (precooked)
  • 1 salt to taste
  • 1 pepper to taste
  • 1/4 cup half and half (optional)

Instructions

  • Wash and peel vegetables and cut into pieces. Divide the broccoli into small pieces. Peel the onion and leave it whole after simmering with the vegetables I discard the onion. Pour water over the vegetables.  Add broccoli and garlic and cook over low to medium heat until the vegetables are soft (but not falling apart!). Let it all cool. After the vegetables are cooled place them in a blender until a smooth consistency is formed. Place the blended vegetables into the soup. Mix everything together well and bring to simmer. May add half and half (optional) Add cooked noodles and season to taste with salt and pepper.
