Cauliflower Soup / Zupa Kalafiorowa Zabielana

Cauliflower soup is another summer dish worth eating all year round, not only during summer.  This soup it is delicious, healthy and easy to prepare. In addition, it does not require many ingredients and does not cost much. In short, it has only advantages.

Ingredients

  • 1 white cauliflower (approximately 800 g)
  • 1.5 l vegetable broth
  • 4 potatoes (approximately 400 g)
  • 2 medium carrots
  • 3 cloves garlic
  • 1/2 bunch green onions
  • 1 tbsp fresh dill
  • 2 tbsp cream or 1/2 cup half and half
  • 1 salt to taste
  • 1 pepper to taste
  • 1 pinch turmeric (optional)
  • 1 bunch fresh chives (for garnishing)

Instructions

  • Remove the leaves tightly surrounding the cauliflower and cut off the protruding depths. Rinse the entire head under cold water. Cut off all the cauliflower florets.
  • Wash and peel the vegetables. Slice the carrots and chop the green onions. Peel the garlic cloves and cut them into slices. Place the cauliflower florets with the rest of the vegetables.
  • Peel the potatoes and dice them. Place them on top of the rest of the vegetables. 
  • Pour 1.5 liters of vegetable broth into the pot, over the vegetables.
  • Add salt, pepper and turmeric. Bring to boil and then simmer covered over low heat for about 20 minutes. The vegetables should be soft.
  • At the very end, add the cream or half and half to whiten the soup.
  • Stir the soup and turn it off as soon as it boils again. Garnish with chives. Enjoy!
