Breaded Pork Chop / Kotlet Schabowy
Breaded pork chop (Kotlet Schabowy) in its most traditional form, this pork cutlet is coated with breadcrumbs, fried in oil and served with potatoes and fried cabbage, cucumber salad or sour kraut. I used the seasoning salt rather than just salt and pepper. Which ever way you choose to make it is simple to make and taste delicious.

Ingredients
- 3 pork chops about 1 lb. (tenderized or cubed)
- 3 tablespoons all purpose flour
- 2 medium eggs
- 1 cup plain bread crumbs
- 1 pinch salt (may substitute for seasoned salt)
- 1 pinch black ground pepper
- 2 tablespoons oil (for frying)
Instructions
- If not tenderized or cubed, then tenderize pork chops between two pieces of plastic wrap to 1/4-inch thickness. I like my pork chops thin.
- Beat the eggs with a pinch of salt and pepper or seasoned salt. This step creates more even seasoning of the pork chop.
- Dip each cutlet in flour covering both sides well, then egg, then breadcrumbs. Heat oil in a large skillet over medium heat. Fry each cutlet 5 to 7 minutes per side over medium heat until golden brown depending on the thickness of the pork chop.
- May be served hot and cold the next day or reheat. Great for sandwiches. Enjoy!

Nothing like the real Polish cutlet. Came out delicious. I served with red cabbage and mashed potatoes.
Try with sour kraut also.
