Blueberry Soup with Noodles / Zupa Jagodowa z Makaronem

Summer is fully open, high temperatures are here almost every day, so I felt like preparing a lighter lunch than usual. When it is hot, I feel like eating simple and fast dishes that do not require too much time in the kitchen to avoid raising the temperature in the house when it is already hot.

Ingredients

  • 100 g blueberries
  • 500 ml water
  • 1-2 tbsp sugar
  • 1 tbsp potato flour
  • 100 ml cream (half and half or yogurt)
  • 1 boiled pasta (prepare per instructions on a package)
  • 1 mint leaf (for decoration)

Instructions

  • Wash the berries well and let dry. Place the berries into 500 ml of boiling water. Add sugar and simmer over low heat for 15 minutes. Mix the half and half with flour and temper with berry stock. Add to soup and mix thoroughly. Let it simmer for a few minutes until the soup thickens slightly. Serve the soup hot or cold, with pasta, fresh fruit and mint leaves.
