Traditional Apple Cake With Oil Dough / Tradycyjna Szarlotka na Cieście Olejowym

This is an alternative recipe for a traditional Polish Szarlotka without the butter and without modification of it's taste. Fortunately there is a way to make this great recipe by substituting butter for oil and saving some unnecessary saturated fat and some cholesterol.

Ingredients

Ingredients for Dough:

  • 400 grams all purpose flour
  • 110 grams granulated white sugar
  • 2 medium egg yolks
  • 2 tablespoons sour cream
  • 170 grams oil ( I used 100% Canola oil)
  • 1.5 teaspoon baking powder
  • 1 pinch salt

Apple Filling:

  • 1.5 kg fresh apples
  • 1 tablespoon cinnamon (optional)
  • 3 tablespoons granulated white sugar (if your apples are sweet, avoid using additional sugar)
  • 1 medium lemon (squeezed)

Instructions

  • Sift the flour.
  • To the sifted flour add granulated white sugar, salt, egg yolks, sour cream, baking powder and oil.
  • First mix all the ingredients with a large spoon. Once the dough starts to form, you can use a kneading hook or knead by hand. This is a small amount of dough so you can use your hand.
  • Once the ingredients are well incorporated and the dough is sort of crumbly, than this type of dough is ready. I used a lined with parchment paper 9 inch spring form pan.
  • Divide the dough into 2 pieces. One should be 3/4 for the bottom of the pan and the other 1/4 will be used as a crumble for the top.
  • Use a spoon to spread the 3/4 of the dough to the bottom of your pan and set aside. No need to refrigerate this type of dough.
  • Now, peel your apples, core them, and grate them on a large mesh of a grater.
  • If the apples are too watery / juicy you can squeeze the access juice and drink it. You can also place some bread crumbs on the bottom of the pan to absorb moistue.
  • Now squeeze juice of 1 lemon and pour over the apples to prevent from darkening.
  • Add sugar, if apples are sour. No need to add sugar if the apples are sweet.
  • Sprinkle cinnamon on the dough and add the shredded apples on top.
  • Now make a crumble from the remaining dough an spread it all over the top.
  • Place the apple cake into a preheated oven at 350 degrees Fahrenheit or 180 degrees Celsius for approximately 30 - 40 minutes until the top is golden brown. Oven temperatures do vary.
  • Once baked, let it cook for about 20 minutes.
