Cranberry sauces come in many variations and are a delicious addition to various savory dishes, making them elegant. It looks very attractive on plates, turning even simple dishes into an exceptionally elegant delicacy. This is my mom's recipe which brings memories of childhood. My mom would make it for Thanksgiving and the holiday season. You don’t need to add any thickener—as they pop, the cranberries release their natural pectin, and as the sauce cools, it gels into the texture you know. In my family, it has to be this basic version. You can definitely make this cranberry sauce ahead of time. Store the cooled sauce in an airtight container in the fridge for up to 5 days pre-Thanksgiving or 5 days post-Thanksgiving days.

Ingredients

  • 340 grams fresh cranberries (12 oz) (washed and picked)
  • 1/2 cup granulated white sugar (110 grams)
  • 1/2 cup brown sugar (90 grams)
  • 1/2 cup orange juice (150 ml)
  • 1 pinch salt (optional)
  • 2 whole cloves
  • 2 grains whole allspice

Instructions

  • Combine the orange juice, both sugars and spices in a medium pot and bring to a boil.
  • Add the cranberries, and salt.
  • Boil gently for about 10 - 13 minutes.
  • Most of the cranberries should burst open, creating a thick sauce. You may need to mash them a bit with a spoon.
  • Transfer the sauce to a bowl and refrigerate until ready to serve. Enjoy and Smacznego!
