Sunday Egg Bake Polish Style / Niedzielna Jajecznica Pieczona w Piekarniku

If you like scrambled eggs or omelets, you will love this recipe. Most often I make this on a Sunday like my dad used to do. I use smoke bacon and veggies sautéed and add beaten eggs with a little milk to it then bake it in the oven. It is so fluffy, delicate and smells amazing. My entire family loves it. Ingredients

  • 300 g smoked bacon (cut up into small pieces)
  • 100 g yellow onion chopped
  • 1/2 medium red bell pepper chopped
  • 6 large eggs (whisked well)
  • 100 ml milk
  • 1 pinch salt (optional)
  • 1 pinch ground black pepper (optional)

Instructions

  • Fry your cat up bacon about half way. Add the vegetables and sauté until transluscent. Add salt and pepper as desired. I did not add any salt since the smoked bacon contains a lot of salt.
  • In a bowl, whisk together the eggs and milk.
  • Lightly grease an oven safe baking dish, about 8 X 10. I used my skillet which is oven proof up to 500 F.
  • Evenly spread the bacon with sautéed veggies over the bottom.
  • Pour the egg/milk mix gently over the bacon and veggies. The egg will soak to the bottom and cover the top.
  • Bake in an oven preheated to 350 degrees Fahrenheit for 15-20 minutes. Remove from the oven and allow to rest 10 minutes before slicing.
  • This dish makes a terrific breakfast for a family gathering, it's awesome over salad greens, and the leftovers are perfect for a quick snack or breakfast on the go.
